Hubs decided to redefine “dad bod”. He started his fitness journey on Instagram @leanmusclegainz. Just working out isn’t going to cut it. You have to eat well too. So, we have started meal prepping.
You might have noticed the lull in my blog posts in 2017. I wasn’t cooking as much, so nothing to write about on a mainly food blog right? Not cooking and having a longer commute meant less time for blogging when I got home. It’s go go go once we walk through that door in the evening. Everyone needs to be fed, bathed, walked, etc.
Having pre-made meals gives us time to visit the playground after work, or go for an extra long family walk, which makes me happy. One of the new dishes I put together is a browned butter, honey lime salmon with coconut rice. I served it with a mango salsa. It was pretty tasty, and it made me feel like it was healthy…even though we all know that all that butter probably isn’t the greatest for your arteries!
For the salmon, I used the Damn Delicious recipe and damn delicious it is indeed! To accompany it, I served it over a simple coconut rice, with a side of mango salsa.
Coconut Rice
A good side dish for your tropical themed dishes.
Ingredients
- 2 cups Jasmine Rice washed
- 1 can Coconut milk (13.5 oz) shaken
- 10.5 oz Coconut water enough to make the liquid ratio 3 cups to 2 cups of rice
- 1 pinch salt
- 1 handful cilantro washed and chopped

In a medium saucepan bring coconut water, coconut milk, rice and salt to a rolling boil. Cover and simmer on low heat until liquid is absorbed, about 15-20 minutes. Fluff with a fork, then stir in cilantro. Let cool, then serve with main dish.
Mango Salsa
A simple fresh side dish
Ingredients
- 1 Ripe Mango peeled, then diced into small cubes
- 1 Red Bell Pepper diced into small cubes
- 1 Ripe Avocado peeled, then diced into small cubes
- 1/2 Small Red Onion diced
- 1 cup Cilantro chopped
- 1 tbsp Olive Oil
- 1 Lime juiced
- Coconut Water
- Salt
- Cayenne Pepper
Instructions

In a medium bowl toss together mango, bell pepper, avocado, cilantro, red onion, olive oil. Add coconut water and lime juice to taste. Season with salt and cayenne pepper to your preference.
